Momofuku Noodle Bar to be Opened at The Cosmopolitan this Winter

Chang whose Momofuku Noodle Bar opened in New York back in 2004, has always loved the freedom Las Vegas has to offer: “Wow, there’s space. It’s really liberating.” which really explains why he chose this spot for his latest business venture.
Chang, whose accolades include four James Beard Awards and who currently has 14 restaurants with numerous concepts and names, also loves that the city’s newer buildings like The Cosmopolitan of Las Vegas, where a Momofuku Noodle Bar is expected to open “winter-ish” don’t have built-in logistical challenges.

The chef, who was loquacious and gregarious during a recent interview in a Cosmopolitan penthouse, has been a self-declared fan of Las Vegas, for years visiting three to four times a year with several friends. For him, Vegas is a place where they can pursue their own interests.

He also didn’t forget to acknowledge his great relationship with The Cosmopolitan, stating that for him it’s promising, partly due to the fact that both are growing organizations.
“It’s a partner that will see us through to the duration,” he said. “I don’t like doing anything short-term.” Chang added.

Interestingly, Momofuku (which means “lucky peach”) in Vegas, won’t be a clone of the New York original, he highlighted. It’s not Chang’s first restaurant outside New York, in fact he has even left his mark in Washington, D.C., Toronto and Sydney, Australia and he said he’s learned to disseminate only that which makes sense.

The Las Vegas restaurant will likely have some eccentricity, and will include dishes like fried chicken and caviar, a pairing Chang said he was introduced to by renowned chef Wylie Dufresne.

He pays tribute to his travel experiences, which he looks at as having been very educational: “I’ve learned a lot in Australia, Toronto, anywhere I’ve been,” he said “I think it makes more sense here” than in New York, he said. “When people are here, they can celebrate.” The restaurant’s dedication to excellence and value are two of the main aspects that characterize his franchise.

“If I want to spend 25 bucks, I can have a great meal,” he said. Chang continued saying that his goal for each of his restaurants is to make people happy. In such a tech-savvy generation, with all the tweeting and Snapchatting, Chang emphasized how he wants customers to feel like his restaurant is the only thing they’re talking about with their peers.

The Cosmopolitan Momofuku Noodle Bar will have an open kitchen and accents of wood, complemented by a view of the Strip and is to be in part of a retail space that was reduced in size. What’s more, a Milk Bar restaurant, also under the Momofuku umbrella, is in the pipeline.

“It saves us the trouble of making too much of a dessert program,” Chang jested. He explained that Milk Bar is anticipated to open at about the same time as Momofuku, but that date remains indeterminate. “It’s up to the gods at this point,” he said. “Right now is the exciting time, because anything seems possible.”
